CHICKEN BINAKOL
You'll Need:
1/2 kg chicken, cut into serving portions
5 cloves garlic, crushed
1 pc medium onion, sliced
1 pc medium potato, cut into chunks
3 stalks tanglad (lemon grass)
1 pouch (200 g) DEL MONTE Tomato Sauce
1 pc buko (coconut), meat cut into 2" x 1" strips
Here's How:
1. Place all ingredients except buko meat in a casserole or sauce pan.
Add 3/4 cup water and 3/4 tsp iodized fine salt (or 3/4 tbsp iodized rock salt).
Simmer for 30 minutes.
2. Add buko and cook for another 5 minutes.
MAKES 5 SERVINGS.
